About Vici

The brief:

A creative soul, I have been baking for about 25 years. I started under my Mum’s supervision in the family kitchen and it didn’t take long to get addicted to learning new techniques and styles. Over the years, I have found that my signature style is definitely more is always more. Friends always come to me for birthday requests and occasion cakes, most often with creative freedom because they know it’ll be a showstopper. I love making tall layer cakes with exciting flavours, beautiful cupcakes with hidden treats, and including furry friends by designing dog-friendly pupcakes to match their human’s order.

Baking professionally means I can share my talents with more people and experience more of the warm fuzzies I feel when someone bites into a slice of cake and makes that face that only people make when they’re tasting something amazing.

Birthday: 19th June.
Favourite flavour: Apple.
Favourite bake: Carrot loaf cake with maple pecans.
Favourite cupcake: Anything with cream cheese icing.
Savoury dish: Bolognese.
Comfort film: Toy Story.
Dream super power: Speed… or flight… or strength
Dogs or cats: Dogs. Obviously.
Season: Winter. Did you know that Seasonal Affective Disorder also applies to other seasons? I get a bit glum during summer and come alive in winter.
Beverage of choice: Decaf tea with lots of sweetener or an oat milk cappuccino, extra dry, with a sprinkle of brown sugar.
Ideal day off: Finding a quiet spot to sit in the highlands, on the shore of a loch, and sitting in silence just being hypnotised by the water, the sway of leaves in the wind, and critters going about their daily crittering.
Still or sparkling: Still. Preferably, Scottish tap water left at room temperature for a good 20 minutes.
Poppadoms or bread: Fresh, crusty white bread. Never sourdough.
Podcast of choice: Off Menu. Obviously.
